30 seconds, 3 ingredients, this dessert recipe is that easy! This Ice cream recipe is Sugar Free, Gluten Free, Dairy Free (Icecream without cream!). So yummy there won’t be left overs!

I created this recipe on the spot, my Husband was taking the bins out and I thought I would surprise him upon return with a dessert! I had seen a similar recipe on QuirkyCooking but did not have time to look up the recipe, I grabbed some fruit which I had frozen (Plums), a few handfuls of Cashews and an egg white, then processed it on a high speed until he came back in the door! It looked amazing, tasted just like ice cream (without cream) and got devoured. I later saw Quirky Cooking’s amazing recipe was actually quite different and maybe better, but this is how I like to make Ice cream now.

Being pink, it will make a beautiful Valentine’s Day surprise for your partner or for your kids! We actually love to make it with all stone fruit, I have a picture of a Nectarine Ice cream (without cream) which was really yummy because the fruit was so sweet.

  • Place 2 Frozen chopped plums (Chop before freezing in smaller pieces than pictured), 1 egg white and 2 handfuls of Cashew nuts into a High speed Food Processor / Thermomix / Thermochef / Bellini
  • Mix on high speed for 30 seconds or until smooth yet still frozen hard
  • And there you go, a delicious, very healthy dessert treat, whipped up in 30 seconds or so!
