This Pear upside down cake is very moist, sweet and sticky, a lovely winter warmer. A perfect Sugar Free treat with a cup of tea for a busy Mum! Pears are in season in Australia, they are delicious and naturally very sweet. I used very ripe soft, squishy pears so I recommend you leave yours to ripen out of the fridge until they are also very soft to touch, this improves the texture and the sweetness of this pear upside down cake. If you needed to, tinned pears would work.

I originally made this recipe with Quinces, but I have promised you that all of my recipes are easy and sadly the quinces were a bit of work to prepare to go into the cake. As it turns out the ripe Pear upside down cake is far better and so easy!

This Pear upside down cake recipe is very moist, sweet and sticky, a lovely winter warmer, perfect Sugar Free treat with a cup of tea for a busy Mum!

Ingredients

Instructions

  • Preheat the oven to 170C (non fan forced)
  • Spray a loaf tin and stick baking paper onto the tin
  • Peel, core and slice 1 Pear into very thin slices, about 3mm
  • Place in a pretty pattern at the bottom of your rectangle loaf tin, try to avoid gaps (my pattern was not hard to beat, you can get more creative!)
  • If you need more slices of Pear, you only need 1 cup in the cake mix so you can use more from the other pears
  • Place pine nuts in the pear gaps - just for a visual effect so this is optional
  • Heat up the butter (20g) and Rice Syrup (I did it in microwave for 20 seconds) and stir - this is the caramel
  • Pour the yummy Caramel over the Pear slices
  • Now to prepare the cake... place 1 cup of chopped pealed pear (it really must be very ripe and soft) into a food processor
  • Add the butter, eggs and Natvia (optional as the pears should be sweet enough, I liked a little natvia as well though) and Combine on medium high
  • Add the dry ingredients (flour, baking power, almond meal) and combine gently
  • Slowly pour or spoon the cake mix onto the Pear slices in the loaf tin
  • Bake for 1 hour, confirm it is cooked with a toothpick - should come out clean
  • Leave in the oven to cool with the door open
  • Once cooled down a little, place your plate or tray over the cake tin and gently turn upside down to leave you with the pretty pear pattern on top
  • It is quite a wet cake when warm (all the melty butter), it will firm once cooled, delicious warm or cold. It is very sweet and rich, small slices with cream is the best!
