This Ricotta Hotcakes recipe is a simple 4 ingredient sugar free breakfast, ready in minutes! Also perfect for school lunch boxes nut free zones. A yummy protein and dairy rich snack with an extra serve of greens too.

Ingredients

Instructions

  • Heat butter up in a medium sized fry pan
  • Finely chop the spinach
  • Combine all ingredients thoroughly with a fork
  • Spoon batter onto medium-hot pan into 4 hotcakes
  • Allow to cook through a little before turning over
  • Needs about 2-3 minutes each side on a medium high heat
  • Cook for a quick sugar free breakfast or a school lunch box snack, safe in a nut free zone
