Carrot & Pecan Mini Cupcakes

  • This recipe has more ingredients than you may be used to seeing in a Sugar Free Kids recipe, but don't be worried, it is still a very easy recipe, the ingredients make a super tasty treat
  • Start by preheating the oven to a low 150 degrees Celsius
  • Grease your mini muffin pans with coconut oil spray (2 trays required to yield 48 mini muffins, if using regular muffin size instead, just bake for 10 minutes longer)
  • Peel and chop the carrots and place into your high speed food processor / Thermomix / Thermochef / Bellini or a blender
  • Add the can of peaches with their juice
  • Add all of the wet ingredients and combine on a medium speed for about 20 seconds
  • Add the Pecans and remaining dry ingredients and combine for a few seconds on medium speed
  • Spoon the mixture into your greased mini muffin pans (this recipe is best without the paper pattie pans)
  • Place in oven for about 1/2 hour, the muffins should be golden
  • These can be stored for 3 days in an air tight container and pack very well in a lunch box, can also be stored well in the freezer. They are sticky finger free, stain free and relatively crumble free for tiny fingers
  • If you wish to add a dollop of cream cheese on top, a teaspoon is all that is needed

    Just made the carrot and pecan mini cupcakes. Made them without rice syrup and spelt flour ( couldn’t find them at the shops) and used plain whole meal flour instead. Tasted great never the less !!!!
