This creamy Italian Rice cake recipe is delicious, it is sugar free, dairy free, gluten free and easy. You are likely to have most of the ingredients at home already too.

If you don’t have any Natvia / Stevia yet, I use it in many of my recipes as it does not affect blood sugar levels and has no calories. It is very sweet so we use very small amounts to avoid a strange after taste. It is available in the sugar aisle at the supermarket.

To make it Dairy Free, these Almond milk or Cashew Milk recipes are easy. You could use any milk.

Italian Rice Cakes - Sugar and Dairy free

A gorgeous friend of mine has cooked and eaten this Italian indulgence since she was a child, our version is kid friendly and a bit better for you with the same feel-good-food sensation.

  • To make this recipe Dairy Free, these Almond milk or Cashew Milk recipes are easy. You could use any milk
  • Heat up the Milk, Coconut cream, Natvia, Vanilla and the zest of the Mandarins in a saucepan
  • Stir in the rice and bring to the boil then simmer with the lid off, on a low-ish heat for about 25 minutes, a creamy risotto is what you are creating
  • Once cooked, you will need to leave this to cool completely
  • Once the risotto has cooled you can preheat the oven to 180C
  • Squeeze the juice from the 2 mandarins and stir through the risotto
  • Separate your eggs
  • Stir the egg yolks into the cooled risotto
  • Whisk the egg whites with electric beaters until stiff then fold into the risotto mix
  • Spoon into 12 muffin pans, I lined mine with silicon patty pans and a spray of coconut oil
  • Sprinkle Almond flakes on top if you like
  • Bake for about 45 minutes
