Thanks to my sister for her idea of green smoothies, which she has for breakfast everyday. There are plenty of recipes around but today I pulled out what I had the in the fridge and got Ruben (22 months old) to help me throw it in the food processor as he loves to cook. He asked to try it once blended and then drank 2 cups of it for his breakfast, smiling and saying cheers as he tapped his cup against mine while we drank it together.
The Spinach is of course packed with vitamins, Chia is a superfood too and is very filling, peach and coconut water sweeten the mix without driving blood sugar levels too high, they are very nutritious and hydrating.
Lately he has been refusing breakfast so this Green smoothie Recipe could be our saviour! Id love to hear your recipes for Green Smoothies too!
Ruben is not even 2 years old, he has been refusing breakfast and would not usually eat spinach...until he helped me make this today and devoured 2 glasses of it, super healthy start to the day
- Peel and roughly chop the cucumber
- Slice the Peach
- Place all ingredients in a high speed food processor / blender / thermomix / thermochef or bellini
- Blend on the highest speed for about 20 seconds
