Thanks to my sister for her idea of green smoothies, which she has for breakfast everyday. There are plenty of recipes around but today I pulled out what I had the in the fridge and got Ruben (22 months old) to help me throw it in the food processor as he loves to cook. He asked to try it once blended and then drank 2 cups of it for his breakfast, smiling and saying cheers as he tapped his cup against mine while we drank it together.

The Spinach is of course packed with vitamins, Chia is a superfood too and is very filling, peach and coconut water sweeten the mix without driving blood sugar levels too high, they are very nutritious and hydrating.

Lately he has been refusing breakfast so this Green smoothie Recipe could be our saviour! Id love to hear your recipes for Green Smoothies too!

Green Smoothie - breakfast superfood

Ruben is not even 2 years old, he has been refusing breakfast and would not usually eat spinach...until he helped me make this today and devoured 2 glasses of it, super healthy start to the day

Ingredients

Instructions

  • Peel and roughly chop the cucumber
  • Slice the Peach
  • Place all ingredients in a high speed food processor / blender / thermomix / thermochef or bellini
  • Blend on the highest speed for about 20 seconds

    I had a green juice/smoothie today & my 2.5yr old was keen to try & he loved it. No actual measurements just threw it together, yesterday i juice a quarter of watermelon, a pineapple & half a lemon-skin removed (all roughly) let it in the fridge overnight & this morning added a handful of spinach & chia seeds and quickly used my stick blender to blend together :-) The juice part was for 2 serves & the baby spinach was just for my serve as my partner wasn’t keen lol

      Hello Fi. That is a great question. You could buy a fresh coconut and crack it open, the delicious juice is right there but this is also pretty tricky so… The Asian section of Woolies has it in cans, as do Asian grocers, just ensure no added sugar. Health food stores also sell natural coconut juice in a carton but the ones I’ve seen are a bit pricey. It’s yummy and sweet but only about 6% natural sugar

    Hi Sha – My Son loves a Kale, Broccoli and Apple Juice – Today after his juice he asked if he could make me one (he is 9 years old). He made a Beetroot, carrot and then put in a whole lemon. Talk about a bit of zing, it certainly woke me up. Beck
