This mini crust less quiche recipe is a great way to add some extra greens into your child’s day. They are a lovely Breakfast or perfect for lunch too. A good serve of protein and leafy greens for your kids. Adults also really enjoy them as a lunch with a serve of veg or salad on the side.

This can easily be varied with your child’s preferred veg and is terrific to be included in their chilled lunchbox, especially for kids who prefer to run around all lunch time, this is a meal where every bite is full of goodness.

This crust less quiche recipe is a great way to add some extra greens into your child's day. They are a lovely Breakfast or perfect for Lunch too, pop them into a chilled lunch box.

Prep Time : 20 minutes. Cook Time : 30 minutes Yield : 12 Allergens : , , ,

Ingredients

Instructions

  • Whisk the eggs, milk and salt together and set aside
  • Preheat oven to 180C fan forced
  • Place silicon muffin patty pans into your muffin tray (12 required)
  • Spray Coconut Oil onto the silicon cups
  • Add a large scoop of coconut oil to a large saucepan
  • Sautee the leek, garlic and option turmeric in a medium hot saucepan until the leek is very tender and translucent
  • Add the Baby English spinach and toss through briefly (the spinach will wilt fast)
  • Scoop 1 heaped Tablespoon of the spinach and Leek mix into a silicon muffin patty pan (or a well greased small ramekin)
  • Add a large dollop of the ricotta on top
  • Pour the egg mix over the filling
  • Sprinkle Pepitas on top (optional)
  • Bake for 1/2 hour
  • Store in Fridge or freezer and enjoy for breakfast or lunch on the run
