This recipe is a cheat’s recipe for crackers as there is no true cooking involved. You can make really tasty crunchy crackers with your own choice of healthy flavours by buying some mountain bread wraps and topping of your choice. I buy the Rye mountain bread wraps to avoid as much wheat as possible. I usually brush on my homemade pesto (recipe to come) but I also have made these with a brush of oil and one of the following:

  • Miso
  • Salt
  • Paprika
  • Cumin, Corriander and Lime Zest
  • Sesame seeds
  • Poppy seeds
  • Sumac

I also love to have Sunrice Multigrain thins or Corn thins or rice cakes ready for Ruben to munch, they are really healthy (no sugar, no junk) and very affordable. Sometimes we also buy Rye or Rice Cruskits too.

Crunchy healthy crackers with your choice of flavour are easy with this cheat recipe.

Ingredients

  • Mountain Bread - 1 packet (I prefer the Rye Mountain bread)
  • Pesto - Make your own (I'll post my recipe soon), or buy a good quality one like Sacla

Instructions

  • Preheat the oven to 200 degrees Celcius
  • Place 1 sheet at a time of Mountain Bread onto your baking tray
  • Brush with Pesto using a pastry brush, make sure it is covered all over but with just a very thin layer
  • Alternatively you can use 1/4 cup Rapseed oil mixed with 1 Tablespoon of the following flavours:
    • Miso
    • Salt
    • Paprika
    • Cumin, Corriander and Lime Zest
    • Sesame seeds
    • Poppy seeds
    • Sumac
  • Place the flavoured Mountain bread in the oven for 5 minutes as you prepare the next piece on a separate baking tray. Keep an eye on it as all ovens vary, it should be starting to brown all over when ready
  • Remove and repeat with the next piece until you are done
  • Break up into smaller pieces, they will look rustic - for a more refined look you can neatly cut the uncooked mountain bread before brushing the Pesto on (just a little bit more timely)
  • Store in an air tight container for a few days
