I love a Coconut and Mango combination and with a Caribbean heritage, my husband does too. Ruben is going to help me make these for his Dad as a Valentine’s Day treat they can enjoy together. The recipe is easy enough for an enthusiastic toddler (or older child) to assist.  It is best to use over ripe fruit for cooking a recipe like this, it adds more flavour and sweetness.

  • You will need a steamer, a tea towel, silicon moulds or greased ramekins and a good mixing device (food processor, high powered blender, Thermomix, Thermochef, Bellini or even a good stab mixer can work well enough)
  • Start by beating the Eggs, together with the Stevia powder in your mixing bowl / processor
  • Add Mango and chopped Peach flesh, Rice Bran Oil, Vanilla Extract and Coconut Cream combine further
  • Gently beat in the Red rice flour
  • Now pour 2-3 Tablespoons into the moulds. I used love heart silicon moulds to capture the Valentine's Day spirit
  • Steam for 30 minutes, until set. It is important to place a tea towel under your steamer lid to prevent condensation dripping onto the cakes
  • Turn out of mould and enjoy warm like a mango creme brulee (minus the sugar) or refridgerate and serve as special treat after school, a delicous creamy custardy, healthy Sugar Free snack or dessert
